Beautiful, ruby red color. Typical nose of Cabernet Sauvignon with lots of blackcurrants, cassis and mulberries but also more complex notes of cedar, leather and tobacco. A nice touch of toasted wood is nicely woven into the whole and gives the wine a noble touch. The mouth is nicely structured but remains pleasant and supple. Long, firm and slightly fumed finish.
The perfect accompaniment to a nice piece of grilled red meat, but also poultry, lamb with garlic and cheeses are not to be missed in his company.

The Cévennes have a Mediterranean climate (warm, dry summers and mild winters) that is strongly influenced in the intermediate seasons by cooling winds from the north and by rains and coolness coming from the Pyrenees. There can sometimes be a lot of precipitation in a short time. These temperature fluctuations (also during the night) guarantee a longer and better ripening of the grapes.

The massif of the Cevennes is one of the last foothills of the Massif Central and is mainly dominated by calcareous soils with clay and boulders.

Manual picking and strict selection. Careful pressing after which a classic fermentation starts at a temperature of 24-26°C in stainless steel vats for 2 weeks. The wine then rests for a few months in stainless steel, after which it is transferred to heavily roasted barrels for 3 months. The wine is then bottled.
