The Cévennes have a Mediterranean climate (warm, dry summers and mild winters) that is strongly influenced in the intermediate seasons by cooling winds from the north and by rains and coolness coming from the Pyrenees. There can sometimes be a lot of precipitation in a short time. These temperature fluctuations (also during the night) guarantee a longer and better ripening of the grapes.

The massif of the Cevennes is one of the last foothills of the Massif Central and is mainly dominated by calcareous soils with clay and boulders.

Manual harvest. Short cold maceration of the individual grapes on their skins after which the fermentation is started in stainless steel vats at a temperature of 16-19°C. The wine then rests and matures for another 4 months in stainless steel barrels, after which it is bottled.
